  • 1 lb (450 g) ground beef (85% lean preferred)
  • 14.5 oz (411 g) canned diced tomatoes
  • 15 oz (425 g) kidney beans, drained and rinsed
  • 1 packet (approx. 1 oz / 28 g) onion soup mix
  • 1 packet (approx. 1 oz / 28 g) chili seasoning

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 7-8 minutes until no longer pink. Drain excess fat if desired.
  2. Transfer the browned beef to the crockpot. Add canned diced tomatoes with juice, kidney beans, onion soup mix, and chili seasoning. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chili is hot and slightly thickened.
  4. About 30 minutes before serving, stir and taste. Adjust seasoning with salt, pepper, cayenne, or hot sauce as desired.
  5. Serve hot, garnished with toppings like shredded cheese, sour cream, or fresh cilantro.

Notes

Brown the beef before adding to the crockpot to develop richer flavor. Drain excess fat to reduce greasiness. Adjust seasoning near the end of cooking. If chili is too watery, uncover crockpot in the last hour to thicken. Add broth or water if too thick.
