Instructions

  1. Heat 2 tablespoons of olive oil in a large soup pot or Dutch oven over medium heat.
  2. Add diced onion, minced garlic, sliced carrots, and chopped celery. SautΓ© for 5-7 minutes until softened and fragrant.
  3. Push the veggies to one side of the pot and add Italian sausage. Break it into small pieces and cook for 6-8 minutes until browned and fully cooked.
