  • 3 tablespoons butter (45g)
  • 2 tablespoons olive oil or vegetable oil
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth (480ml), low-sodium preferred
  • 1/2 cup milk or cream (120ml), whole milk or cream for richness
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • Fresh parsley (optional, for garnish)

Instructions

  1. Pat the chicken thighs or breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Place the all-purpose flour in a shallow dish. Coat each piece of chicken lightly but evenly with flour, shaking off any excess.
  3. Heat the butter and olive oil in a large skillet over medium heat. Once the butter melts and foams, add the chicken pieces. Cook about 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil.
  4. In the same skillet, add the chopped onion. Cook for about 4 minutes until softened and translucent, scraping up browned bits from the pan. Add minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle 1 tablespoon of flour over the onions and garlic, stirring constantly for 1-2 minutes to cook out raw flour taste.
  6. Slowly pour in chicken broth while whisking to prevent lumps. Add milk or cream and stir continuously until thickened, about 3-5 minutes, until gravy is smooth and velvety.
  7. Stir in dried thyme and Worcestershire sauce. Taste and adjust salt and pepper as needed.
  8. Return chicken to the pan, nestling pieces into the gravy. Simmer together for 5 minutes over low heat to meld flavors and keep chicken tender.
  9. Garnish with fresh parsley if desired and serve immediately with your favorite sides.

If gravy is too thick, whisk in extra broth or milk to loosen. Do not overcrowd the pan when searing chicken to ensure a golden crust. Let chicken rest briefly after cooking to keep it juicy.
