  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1 tablespoon ground cinnamon
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (240ml) whole milk (or almond/oat milk for dairy-free)
  • 1 teaspoon vanilla extract
  • Cinnamon sugar topping: ½ cup (100g) granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray and set aside.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
  3. In a separate bowl, beat the eggs lightly. Add melted butter, milk, and vanilla extract and whisk until well blended.
  4. Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined, leaving a few lumps to avoid dense bread.
  5. Spoon the batter into the prepared loaf pan and smooth the top.
  6. Mix the cinnamon sugar topping and sprinkle evenly over the batter surface.
  7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too fast, cover loosely with foil after 30 minutes.
  8. Remove from oven and let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  9. Slice thick pieces and serve warm or at room temperature with butter or honey.

Notes

Do not overmix the batter to keep the bread tender. If batter is too thick, add a tablespoon of milk to loosen. Rotate loaf pan halfway through baking for even crust. Let bread cool on a rack to maintain crunchy crust and prevent sogginess. For dairy-free, substitute milk and butter with plant-based alternatives. For gluten-free, use a 1:1 gluten-free baking flour blend.
