Comforting Spinach Mushroom Orzo Skillet Recipe Ready in 30 Minutes

Ingredients

  • 1 cup (190 g) orzo
  • 2 cups (480 ml) chicken or vegetable broth
  • 8 oz (227 g) baby bella or cremini mushrooms, sliced
  • 2 cups (60 g) fresh spinach
  • 1 medium yellow or white onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Β½ cup (50 g) grated parmesan cheese
  • Salt and pepper to taste
  • (Optional) Cooked chicken, tofu, or chickpeas for extra protein

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add diced onion and sautΓ© for 2-3 minutes until softened.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add sliced mushrooms and cook for 5-6 minutes, stirring occasionally, until they release their moisture and turn golden brown.
  5. Pour in 2 cups of chicken or vegetable broth and bring to a simmer.
  6. Stir in 1 cup of orzo, ensuring it’s evenly distributed in the liquid.
  7. Cover and cook for 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  8. Add spinach and stir until wilted, about 2 minutes.
  9. Turn off the heat and mix in Β½ cup of grated parmesan cheese. Season with salt and pepper to taste.
  10. (Optional) Fold in cooked chicken, tofu, or chickpeas for extra protein.
  11. Serve immediately while warm and comforting.
