Creamy Bacon Cheeseburger Soup

A hearty and comforting soup that combines the flavors of a bacon cheeseburger with a creamy, indulgent broth—perfect for chilly nights.

  • 1 lb ground beef
  • 6 slices thick-cut bacon
  • 2 cups diced potatoes (Russet or Yukon Gold)
  • 2 cups shredded sharp cheddar cheese
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, extra shredded cheese, crumbled crackers

Instructions

  1. Cook the bacon in a large soup pot over medium heat until crispy, about 5-7 minutes. Remove the bacon, chop it into small pieces, and set aside. Leave about 2 tablespoons of bacon grease in the pot.
  2. Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon as it cooks. Season with a pinch of salt and pepper. Remove the beef and set aside.
  3. Add the butter to the pot. Once melted, toss in the diced onion, carrots, and celery. Sauté for 5-7 minutes, until softened. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Sprinkle the flour over the vegetables and stir well to coat. Let it cook for 1-2 minutes, stirring constantly, to eliminate the raw taste.
  5. Gradually stir in the chicken broth, aiming for a smooth consistency. Add the diced potatoes and bring the soup to a gentle boil. Reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  6. Stir the cooked beef and bacon into the pot, mixing well.
  7. Lower the heat and slowly pour in the half-and-half, stirring to combine. Add the shredded cheddar cheese, one handful at a time, stirring until melted and smooth.
  8. Add the Worcestershire sauce and adjust the salt and pepper to taste. Let the soup simmer on low for 5 minutes to meld all the flavors together.
  9. Ladle the soup into bowls and top with optional garnishes like green onions or extra cheese.
