  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 16 ounces (450g) potato gnocchi
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (100g) shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 cup (240ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (60g) cooked and crumbled bacon
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Green onions, chopped for garnish

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, add 2 boneless, skinless chicken breasts. Cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken and set aside to cool slightly before shredding.
  2. While the chicken is cooking, bring a large pot of salted water to a boil. Add 16 ounces (450g) of gnocchi and cook according to package instructions (usually 2-3 minutes). Drain and set aside.
  3. In the same skillet, add another tablespoon of olive oil and sautΓ© 2 minced garlic cloves until fragrant (about 1 minute). Be careful not to let them brown.
  4. Lower the heat and add 8 ounces (225g) of softened cream cheese to the skillet. Stir until it begins to melt and combine with the garlic.
  5. Pour in 1 cup (240ml) of chicken broth and 1/2 cup (120ml) of heavy cream. Whisk until smooth, then sprinkle in 1 packet of ranch seasoning mix. Stir well to incorporate.
  6. Add 1 cup (100g) of shredded cheddar cheese to the sauce and stir until melted and creamy.
  7. Fold in the cooked gnocchi, shredded chicken, and 1/2 cup (60g) of crumbled bacon. Stir gently to coat everything in the sauce.
  8. Let the mixture simmer on low heat for 5-7 minutes, allowing the flavors to meld together. If the sauce is too thick, add a splash of chicken broth to loosen it up.
  9. Top the dish with a handful of chopped green onions for a fresh finish.
  10. Serve hot and enjoy the ultimate creamy comfort food!
