  • 1 cup white or jasmine rice (uncooked)
  • 1 packet French onion soup mix
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup caramelized onions (optional)
  • 2 tablespoons butter (for sautéing onions)
  • Salt and pepper (to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized cubes. Season with a pinch of salt and pepper.
  3. Heat a large skillet over medium heat and add a tablespoon of oil. Cook the chicken until lightly browned on all sides (about 5-7 minutes). Set aside.
  4. Optional: In the same skillet, melt 2 tablespoons of butter. Add sliced onions and cook on low heat, stirring occasionally, until golden and soft (around 15 minutes).
  5. In a mixing bowl, whisk together the French onion soup mix, chicken broth, and heavy cream until smooth.
  6. In a 9×13-inch casserole dish, spread the uncooked rice evenly on the bottom. Layer the browned chicken pieces on top, followed by the caramelized onions (if using). Pour the prepared sauce over the top and stir slightly to ensure everything is evenly distributed.
  7. Sprinkle the shredded mozzarella cheese evenly over the dish.
  8. Cover the casserole dish tightly with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let the dish rest for 5 minutes after removing it from the oven. Garnish with fresh parsley and serve warm.
