  • 12 oz (340 g) pasta (penne, fettuccine, or spaghetti)
  • 2 cups (about 300 g) cooked chicken, shredded or diced
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 Β½ cups (360 ml) heavy cream
  • 1 cup (90 g) Parmesan cheese, freshly grated
  • 1 cup (240 ml) chicken broth
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving Β½ cup of pasta water.
  2. In a deep skillet, melt the butter over medium heat. Add the minced garlic and sautΓ© for about 1 minute until fragrant, being careful not to let it burn.
  3. Stir in the chicken broth and heavy cream. Simmer gently for 3-4 minutes, allowing the flavors to meld together.
  4. Slowly whisk in the grated Parmesan cheese until fully melted and the sauce thickens slightly. If it looks too thick, add a splash of the reserved pasta water.
  5. Add salt and freshly ground pepper to taste.
  6. Add the cooked chicken to the sauce and stir to coat. Then toss in the drained pasta, mixing until everything is evenly coated.
  7. Sprinkle with fresh parsley and extra Parmesan before serving warm.

Notes

Use fresh Parmesan for the best flavor and texture. Be careful not to overcook the garlic to avoid bitterness. Adjust the sauce consistency with reserved pasta water if needed.
