  • 12 oz (340 g) pasta (spaghetti, penne, or fettuccine)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 4 cloves garlic, minced
  • 1 can (14 oz/400 g) crushed tomatoes
  • 1 cup (240 ml) heavy cream
  • ½ cup (50 g) Parmesan cheese, grated
  • Salt and pepper to taste
  • Handful of fresh basil leaves, chopped
  • Optional: Red pepper flakes for heat

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup (120 ml) of the pasta water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn it.
  3. Pour in the crushed tomatoes and stir well. Let the sauce simmer for 5–7 minutes to meld the flavors.
  4. Reduce heat to low and stir in the heavy cream. Mix until the sauce is smooth and creamy.
  5. Add grated Parmesan cheese, stirring until fully melted and incorporated into the sauce.
  6. Season the sauce with salt, pepper, and optional red pepper flakes. Taste and adjust as needed.
  7. Add the cooked pasta to the skillet, tossing gently to coat every noodle in the creamy sauce. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
  8. Remove from heat and garnish with fresh basil. Serve immediately and enjoy!

Notes

For best results, use high-quality canned tomatoes and freshly grated Parmesan. Reserve pasta water to adjust sauce consistency. Let cream come to room temperature before adding to prevent curdling.
