  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Rinse strawberries under cold water, hull, and slice evenly. Toss with granulated sugar and lemon juice in a mixing bowl. Let sit to macerate.
  2. In a separate bowl, combine all-purpose flour, rolled oats, brown sugar, and a pinch of salt. Add cold cubed butter and work it into the dry ingredients until crumbly with pea-sized clumps.
  3. Beat softened cream cheese with heavy cream and vanilla extract until smooth and fluffy, about 3-5 minutes.
  4. Preheat oven to 350°F (175°C). Spread macerated strawberries evenly in the bottom of a 9×9-inch baking dish. Dollop and spread the creamy mixture over the strawberries. Sprinkle the crunchy topping evenly over the cream layer.
  5. Bake for 25-30 minutes until the topping is golden brown and crisp. Let cool for at least 20 minutes before serving. Optionally chill before serving.

Notes

Use cold butter for the topping to ensure crispness. Do not overmix the cream layer to avoid runniness. Use ripe, firm strawberries for best texture. If topping browns too quickly, cover loosely with foil halfway through baking. Let dessert cool to allow layers to set before serving.
