Creamy Sugar Cookie Cheesecake Recipe Perfect for Christmas

  • 1 ½ cups (190g) crushed sugar cookies (store-bought or homemade)
  • 5 tablespoons (70g) unsalted butter, melted
  • 24 ounces (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) heavy cream
  • Whipped cream
  • Crushed candy canes or festive sprinkles

Instructions

  1. Preheat the oven to 325°F (160°C). Wrap the outside of your springform pan with two layers of aluminum foil to prevent water from seeping in during baking.
  2. Crush the sugar cookies into fine crumbs using a food processor or by placing them in a zip-top bag and rolling with a pin. Mix the crumbs with melted butter until evenly coated. Press the mixture into the bottom of the springform pan. Bake for 10 minutes, then set aside to cool.
  3. In a large bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla, sour cream, and heavy cream until fully combined.
  4. Pour the filling over the cooled crust, smoothing the top with a spatula.
  5. Place the springform pan inside a large roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan.
  6. Carefully transfer the roasting pan to the oven. Bake for 55-65 minutes, or until the center is just slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour.
  7. Remove the cheesecake from the water bath and let it cool completely at room temperature. Then, refrigerate for at least 4 hours or overnight.
  8. Just before serving, top with whipped cream and your choice of holiday decorations like crushed candy canes or festive sprinkles.
