  • 1.5 pounds boneless, skinless chicken breast or thighs, cut into 1-inch bite-sized pieces
  • 2 large eggs
  • 1/4 cup honey
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup BBQ sauce
  • 2 tbsp honey
  • Olive oil or avocado oil (optional, for crisping)

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Cut chicken into 1-inch pieces and pat dry with paper towels.
  3. In a bowl, whisk together eggs and 1/4 cup honey.
  4. In another bowl, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Dip each chicken piece into the egg and honey mixture, then coat with the breadcrumb mixture. Place evenly spaced on the prepared baking sheet.
  6. Bake for 15 minutes, then flip each piece and bake for another 10 minutes until cooked through and golden brown (internal temperature 165°F/74°C).
  7. While baking, mix BBQ sauce with 2 tablespoons honey to make the glaze.
  8. Remove chicken from oven and brush each piece generously with the honey BBQ glaze.
  9. Return to oven and bake for 5 more minutes to caramelize the glaze.
  10. Let rest for a couple of minutes before serving.

Notes

For extra crispiness, broil for 1-2 minutes after glazing but watch closely to avoid burning. Use a wire rack on the baking sheet for better air circulation if available. Avoid overcrowding the pan to prevent steaming. Pat chicken dry before coating to ensure crispiness. Reheat leftovers in oven or toaster oven to maintain crunch; avoid microwave.
