  • 2 large eggs, room temperature
  • 1 cup breadcrumbs (panko preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Olive oil spray or light brush of olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on the sheet now.
  2. Drain the cottage cheese thoroughly using a fine-mesh sieve or cheesecloth for about 10 minutes. Pat dry with paper towels to remove excess moisture.
  3. If desired, blend the cottage cheese in a food processor for 30 seconds until smooth but still a bit textured.
  4. In a medium bowl, whisk the eggs until fully combined. Season lightly with salt and pepper.
  5. In another shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well.
  6. Add the cottage cheese to the egg bowl and gently fold until evenly mixed.
  7. Using a spoon or your hands, shape the mixture into sticks about 3 inches long and 1 inch wide, yielding around 12 sticks. If the mixture feels too wet, sprinkle in a little extra breadcrumb mix.
  8. Dip each stick into the breadcrumb mixture, pressing gently to coat all sides well.
  9. Place the coated sticks on the lined baking sheet or wire rack spaced about 1 inch apart. Lightly spray or brush the tops with olive oil.
  10. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy on all sides.
  11. Let the sticks cool for 5 minutes before serving.

Notes

Drain and pat dry the cottage cheese thoroughly to avoid soggy sticks. Press breadcrumb coating firmly for best crunch. Flip sticks halfway through baking for even browning. Use a wire rack for air circulation if available. Avoid increasing oven temperature to prevent burning. Let sticks cool before serving to set the crisp coating.
