  • 2 boneless, skinless chicken breasts
  • 1 cup freshly grated parmesan cheese
  • 1 cup Panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about Β½ inch.
  2. In one bowl, whisk the eggs. In another bowl, combine the grated parmesan, Panko breadcrumbs, garlic powder, salt, and black pepper.
  3. Dip each piece of chicken into the egg mixture, then into the parmesan breadcrumb mixture, pressing gently to ensure the coating sticks.
  4. Add olive oil to a large frying pan and heat over medium heat until it’s shimmering.
  5. Place the coated chicken into the hot pan and cook for 4-5 minutes per side, or until the crust is golden brown and the chicken is cooked through (internal temperature of 165Β°F or 74Β°C).
  6. In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
  7. Drizzle the garlic butter sauce over the crispy chicken and garnish with fresh parsley if desired.

Notes

For best results, use fresh parmesan cheese and avoid overcrowding the pan while frying. Adjust the heat if the chicken isn’t browning evenly.
