A comforting and easy creamy chicken recipe made with just chicken, cream cheese, and a simple seasoning blend. Ready in under 30 minutes, perfect for busy weeknights.

Ingredients

Scale
  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 8 oz (225 g) cream cheese, softened
  • 1 tbsp seasoning blend (garlic powder, onion powder, salt, pepper)
  • Optional: fresh herbs like parsley or thyme for garnish
  • Optional: squeeze of lemon juice
  • Optional: sautéed mushrooms or spinach

Instructions

  1. Pat 1 lb (450 g) of chicken breasts or thighs dry with paper towels. Season both sides evenly with 1 tablespoon seasoning blend.
  2. Heat a large non-stick skillet over medium heat for about 2 minutes. Add 1 tablespoon olive oil or butter.
  3. Add the seasoned chicken to the skillet. Cook undisturbed for 5-6 minutes until golden brown. Flip and cook the other side for another 5-6 minutes until internal temperature reaches 165°F (74°C).
  4. Reduce heat to low. Cut 8 oz (225 g) softened cream cheese into chunks and add to the pan around the chicken. Stir gently to melt into a smooth sauce. Add 2 tablespoons of water, milk, or broth at a time if sauce is too thick.
  5. Simmer chicken in the creamy sauce for 3-4 minutes, turning gently to coat well.
  6. Taste and adjust seasoning if needed. Add fresh herbs or a squeeze of lemon juice if desired.
  7. Serve the creamy chicken over rice, pasta, or steamed vegetables.

Notes

Soften cream cheese before adding to avoid clumps. Use medium heat to sear chicken for best texture. Add liquid if sauce thickens too much. Cook chicken in batches if needed to avoid overcrowding the pan.
