  • 1 teaspoon dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish to prevent sticking.
  2. In a large mixing bowl, combine cooked chicken, chopped onion, minced garlic, and frozen mixed vegetables. Pour in chicken broth and sour cream (or Greek yogurt). Add dried thyme, salt, and freshly cracked black pepper. Mix gently but thoroughly until well combined. Set aside.
  3. In another bowl, whisk together all-purpose flour, baking powder, and salt. Cut in softened butter using a fork or pastry cutter until mixture resembles coarse crumbs.
  4. Stir shredded cheddar cheese into the flour and butter mixture. Gradually pour in milk and stir just until dough comes together; it should be slightly sticky but manageable. Avoid overmixing.
  5. Transfer chicken filling to the prepared baking dish, spreading evenly. Dollop or spoon biscuit dough over the top in large spoonfuls, covering the chicken mixture as best as possible.
