  • 1 cup marinated olives (Kalamata or mixed varieties)
  • 1 cup fresh mozzarella balls (bocconcini size)
  • 8 ounces Italian salami slices, folded or cut into bite-sized pieces
  • 1/2 cup roasted red peppers, sliced into strips
  • 20 fresh basil leaves, small and tender
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced finely
  • Pinch of red pepper flakes (optional)
  • Freshly cracked black pepper, to taste
  • Sea salt, to taste

Instructions

  1. Marinate the olives: In a mixing bowl, combine marinated olives, olive oil, balsamic vinegar, minced garlic, red pepper flakes, salt, and pepper. Toss gently to coat and set aside for 10 minutes.
  2. Prep fresh ingredients: Rinse cherry tomatoes and basil leaves under cold water and pat dry. Slice roasted red peppers into thin strips. Cut salami into bite-sized pieces if not pre-sliced.
  3. Assemble skewers: Thread ingredients onto each skewer in a pattern: cherry tomato, salami fold, mozzarella ball, marinated olive, roasted red pepper strip, basil leaf, and repeat until skewer is full (about 5-6 pieces).
  4. Final drizzle and seasoning: Drizzle any leftover marinade over the assembled skewers. Add extra olive oil or balsamic vinegar if desired. Sprinkle with cracked black pepper and sea salt.
  5. Chill or serve immediately: Serve fresh or chill for up to 1 hour before serving. If prepared ahead, cover and refrigerate, then bring to room temperature for about 10 minutes before serving.

Notes

Soak wooden skewers for 10 minutes if grilling to prevent burning. Use firm, small-curd mozzarella for best texture. Avoid overcrowding skewers to keep flavors distinct.
