This Easy Tater Tot Casserole recipe combines crispy tater tots, creamy beef, and veggies for the ultimate comfort food that’s quick, customizable, and family-friendly.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) tater tots
  • 1 small onion, diced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is softened (about 5-7 minutes). Drain excess grease.
  3. Stir in garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
  4. In a mixing bowl, combine the cooked beef and onion mixture, cream of mushroom soup, and frozen mixed vegetables. Mix until well combined.
  5. Spread the beef and veggie mixture evenly in the greased baking dish. Sprinkle 1 cup of shredded cheddar cheese over the top.
  6. Arrange the tater tots in a single layer over the cheese, covering the entire dish.
  7. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the tater tots are golden and crispy.
  8. Sprinkle the remaining cup of cheddar cheese over the tater tots and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  9. Let the casserole sit for 5 minutes before serving.

Notes

[‘Broil the casserole for 2-3 minutes at the end of baking for extra crunch.’, ‘Assemble the casserole ahead of time and refrigerate for up to 24 hours before baking.’, ‘Use fresh vegetables instead of frozen by sautéing them with the onion and beef.’, ‘Consider adding smoked paprika or Worcestershire sauce for extra flavor.’]
