  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 1 cup (100g) grated sharp cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1 large egg
  • 1/2 cup (120ml) heavy cream
  • 6 slices cooked bacon, crumbled or chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook the bacon until crispy, then crumble or chop into small pieces. Set aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. Cut the cold, cubed butter into the dry ingredients using a pastry cutter or forks until the mixture resembles coarse crumbs.
  5. Gently fold in the crumbled bacon, grated cheddar cheese, and chopped chives.
  6. In a small bowl, whisk together the egg and heavy cream.
  7. Pour the wet mixture into the dry ingredients and gently mix until just combined.
  8. Turn the dough onto a lightly floured surface, pat into a 1-inch thick circle, and cut into 8 triangles or use a biscuit cutter for round scones.
  9. Transfer scones to the prepared baking sheet and bake for 18-22 minutes, or until golden brown. Let cool for a few minutes before serving.
