bruschetta flatbread pizza - featured image

A light yet satisfying flatbread pizza topped with juicy tomatoes, fragrant basil, and creamy pesto, perfect for any occasion.

Ingredients

  • Flatbread (store-bought or homemade, e.g., naan or thin flatbread)
  • Roma or cherry tomatoes, diced
  • Fresh basil leaves, chopped
  • Pesto (store-bought or homemade)
  • Fresh garlic, minced
  • Extra virgin olive oil
  • Balsamic glaze (optional)
  • Salt
  • Pepper
  • Shredded mozzarella (optional, or dairy-free cheese)

Instructions

  1. Preheat your oven to 375°F (190°C). Place the flatbread on a baking sheet and set aside.
  2. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, salt, and pepper. Toss until evenly coated and let it sit for 5-10 minutes to allow the flavors to meld.
  3. Spread a thin layer of pesto over the flatbread, leaving a small border around the edges. Spoon the bruschetta mixture evenly over the pesto. If desired, sprinkle shredded mozzarella on top.
  4. Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the edges of the flatbread are golden and crispy. If using cheese, it should be melted and bubbly.
  5. Remove the flatbread from the oven and drizzle with balsamic glaze if desired. Slice into portions and serve warm.

Notes

[‘Drain excess liquid from tomatoes to prevent soggy flatbread.’, ‘Pre-toast flatbread for 2-3 minutes for extra crispiness.’, ‘Customize pesto with lemon or Parmesan for added flavor.’, ‘Reheat leftovers in an oven or toaster oven to restore crispiness.’]
