  • 1 cup (240 ml) extra virgin olive oil
  • 4 ounces (115 g) creamy feta cheese, crumbled or roughly chopped
  • 1 tablespoon fresh oregano, finely chopped (or 1 teaspoon dried oregano)
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Finely chop 1 tablespoon each of fresh oregano and thyme leaves. Mince 2 garlic cloves finely.
  2. In a medium mixing bowl, pour 1 cup (240 ml) of extra virgin olive oil. Add 1 tablespoon of fresh lemon juice and whisk gently to combine.
  3. Stir in the chopped oregano, thyme, minced garlic, 1/4 teaspoon red pepper flakes (if using), freshly ground black pepper to taste, and a pinch of sea salt.
  4. Gently fold in 4 ounces (115 g) of crumbled or roughly chopped creamy feta cheese, keeping some chunks intact for texture.
  5. Cover the bowl and let the dipping oil sit at room temperature for at least 20 minutes to allow flavors to meld.
  6. Before serving, give it a quick stir and taste. Adjust black pepper or lemon juice if desired. Drizzle a little extra olive oil on top for a glossy finish.

Notes

Use a good-quality rustic bread with a crunchy crust and soft crumb for dipping. If refrigerated, bring the oil to room temperature before serving to restore dipping consistency. Avoid overmixing the feta to keep texture. Fresh herbs are preferred for best flavor. The dip tastes better after resting several hours or overnight.
