These rosemary garlic steak kebabs are a quick and easy recipe perfect for hearty grill nights, featuring tender steak cubes marinated in a savory blend of fresh herbs and garlic.

Ingredients

Scale
  • 1.5 pounds sirloin or ribeye steak, cut into 1.5-inch cubes
  • 2 tablespoons fresh rosemary, finely chopped
  • 4 large garlic cloves, minced
  • 8 whole garlic cloves for skewers
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme (optional)

Instructions

  1. Trim excess fat from the steak and cut into 1.5-inch cubes, keeping pieces uniform.
  2. In a medium bowl, whisk together olive oil, lemon juice, Worcestershire sauce, rosemary, minced garlic, salt, pepper, and optional thyme.
  3. Add steak cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  4. If using bamboo skewers, soak them in water for 30 minutes.
  5. Thread steak cubes alternately with whole garlic cloves and small rosemary sprigs onto skewers, about 4 to 5 pieces per skewer.
  6. Preheat grill to medium-high heat (around 400°F). Oil grates lightly.
  7. Grill kebabs for 3-4 minutes per side, turning carefully with tongs, until charred outside and medium-rare to medium inside (130-140°F internal temperature).
  8. Remove kebabs from grill and let rest for 5 minutes before serving.

Notes

Marinate steak for at least 30 minutes but no longer than 2 hours to avoid meat becoming mushy. Soak bamboo skewers for 30 minutes before use to prevent burning. Rest kebabs for 5 minutes after grilling to retain juices. Watch grill closely to avoid burning garlic and rosemary.
