  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup (125g) fresh raspberries
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the egg until fully combined, then stir in the lemon zest, lemon juice, and vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding gently until just combined. Do not overmix.
  6. Carefully fold in the fresh raspberries, being gentle to keep them intact.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 12-15 minutes until edges are lightly golden and centers are set but still soft.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. If desired, dust with powdered sugar once fully cooled.
