  • 1 cup (150g) fresh strawberries, hulled and finely chopped
  • 1 ¾ cups (220g) all-purpose flour (can swap half for whole wheat flour)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ⅓ cup (80ml) honey or maple syrup
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (50g) old-fashioned rolled oats
  • ¼ cup (60g) plain Greek yogurt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Gently wash, hull, and finely chop the strawberries. Pat dry on paper towels to remove excess moisture.
  4. In a large bowl, beat the softened butter with honey or maple syrup until fluffy and light, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until smooth. Fold in Greek yogurt if using.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined.
  7. Fold in the rolled oats and chopped strawberries carefully to avoid crushing the berries.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 12-15 minutes until cookies are lightly golden around the edges but still soft in the center.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Pat strawberries dry to prevent soggy dough. Do not overmix after adding flour to keep cookies tender. Use softened butter, not melted, for best texture. If dough is too loose, chill briefly before baking. Can substitute ingredients for vegan or gluten-free versions.
