  • 1 lb boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter, divided
  • 45 cloves garlic, minced
  • 1 cup chicken stock
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Once the butter is melted, add the chicken breasts.
  3. Sear the chicken for about 4-5 minutes per side, until golden brown. Remove the chicken from the skillet and set aside.
  4. Add the remaining 2 tablespoons of butter to the skillet, along with the minced garlic. SautΓ© for about 1 minute, until fragrant.
  5. Pour in the chicken stock and lemon juice, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 2-3 minutes.
  6. Return the chicken to the skillet, spooning some of the sauce over the top. Cover and cook for another 5-7 minutes, or until the chicken is fully cooked (internal temperature should reach 165Β°F/74Β°C).
  7. Garnish with chopped parsley and serve warm.

Notes

If your sauce feels too thin, let it simmer uncovered for an extra minute or two. Taste and adjust the seasoning for perfect flavor. Fresh parsley adds a pop of color and complements the garlic butter sauce.
