Ingredients

  • Chicken thighs (bone-in or boneless)
  • Baby potatoes (red or Yukon Gold, halved)
  • Fresh minced garlic
  • Parmesan cheese (grated or shredded)
  • Chicken broth (low-sodium)
  • Heavy cream
  • Unsalted melted butter
  • Italian seasoning
  • Salt
  • Black pepper
  • Fresh parsley (optional, for garnish)

Instructions

  1. Season the chicken thighs generously with salt, pepper, and Italian seasoning. Set aside.
  2. Wash and halve the baby potatoes. Sprinkle them lightly with salt and pepper.
  3. In a mixing bowl, whisk together melted butter, minced garlic, chicken broth, heavy cream, and Parmesan cheese until smooth.
  4. Place the chicken thighs at the bottom of the crockpot. Add the potatoes on top, followed by the sauce, ensuring everything is evenly coated.
  5. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours. The chicken should be tender and the potatoes fork-soft.
  6. If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water).
  7. Garnish with fresh parsley and extra Parmesan if desired. Serve hot and enjoy!

For a thicker sauce, stir in a cornstarch slurry during the last 30 minutes of cooking. Serve with a crusty baguette to soak up the sauce.
