  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Season both sides of the chicken breasts with salt, pepper, and oregano.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the chicken and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  3. Add the minced garlic to the skillet and sautΓ© for 1 minute until fragrant. Be careful not to burn it.
  4. Pour in the balsamic vinegar and stir to deglaze the pan. Let it simmer for 2 minutes to reduce slightly.
  5. Add the cherry tomatoes to the skillet and stir them into the balsamic glaze. Cook for 4-5 minutes, stirring occasionally, until the tomatoes soften and release their juices.
  6. Return the chicken to the skillet, spooning some of the balsamic glaze and tomatoes over the top. Simmer for 2-3 minutes, allowing the flavors to meld.
  7. Sprinkle chopped basil over the dish just before serving for a fresh, aromatic finish.
