A simple yet flavorful breakfast dish combining tangy feta, juicy tomatoes, fresh herbs, and protein-packed eggs, perfect for busy mornings or leisurely brunches.

Ingredients

  • 4 large eggs
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced or thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh basil, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup spinach (optional)

Instructions

  1. Preheat your oven to 375Β°F (190Β°C).
  2. In an oven-safe skillet or baking dish, drizzle 2 tablespoons of olive oil. Add the halved cherry tomatoes, garlic, and a pinch of salt and pepper. Toss to coat evenly.
  3. Spread the tomatoes out into an even layer and bake in the preheated oven for 10 minutes, until they begin to soften and release their juices.
  4. Remove the skillet from the oven and sprinkle the crumbled feta cheese over the tomatoes. Add fresh or dried herbs and a pinch of red pepper flakes for heat (if desired).
  5. Make small indentations in the tomato and feta mixture using the back of a spoon and carefully crack an egg into each indentation.
  6. Return the skillet to the oven and bake for 10-12 minutes, or until the egg whites are set but the yolks are still slightly runny. If you prefer firmer yolks, bake for 2-3 minutes longer.
  7. Remove from the oven and let it cool for 2 minutes. Garnish with extra fresh herbs and a drizzle of olive oil before serving.
