Instructions

  1. Activate the yeast by combining warm milk (about 110°F / 43°C) with 1 tablespoon of sugar and the instant yeast in a small bowl. Let sit for 5-7 minutes until foamy.
  2. In a large bowl or stand mixer, whisk together flour, remaining sugar, and salt. Add the yeast mixture, melted butter, and eggs. Mix on low speed until combined, then knead on medium speed for 8-10 minutes until dough is smooth and elastic (12-15 minutes if kneading by hand).
  3. Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  4. Punch down the dough gently, then roll out on a floured surface to about 1/2 inch thickness. Cut doughnuts and holes using a doughnut cutter or two round cutters. Place on parchment-lined baking sheets.
  5. Cover cut doughnuts loosely and let rise again until puffed, about 30-45 minutes.
