Irresistible Chicken Pillows Recipe with Easy Parmesan Sauce

  • 1 package crescent rolls
  • 2 cups cooked chicken, shredded or diced
  • 4 ounces cream cheese, softened
  • 2 green onions, finely chopped
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon flour

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded chicken, softened cream cheese, chopped green onions, salt, and pepper. Mix until creamy and well combined.
  3. Unroll the crescent dough and separate it into triangles. Place a heaping tablespoon of the filling onto the wide end of each triangle. Fold the dough over the filling, pinching the edges to seal, and shape into a pillow.
  4. Arrange the pillows on the prepared baking sheet and brush the tops with melted butter.
  5. Bake the pillows for 12-15 minutes, or until golden brown and puffed.
  6. While the pillows are baking, melt 2 tablespoons of butter in a small saucepan over medium heat. Whisk in 1 tablespoon of flour and cook for 1 minute. Slowly add 1 cup of chicken broth, whisking constantly, followed by 1 cup of heavy cream. Bring to a gentle simmer, then stir in 1/2 cup of grated Parmesan cheese. Cook until thickened (about 3-4 minutes).
  7. Remove the pillows from the oven and let them cool slightly. Serve warm, drizzled with the creamy Parmesan sauce.

Notes

Don’t overfill the pillows to avoid leaks. Seal the edges tightly to keep the filling inside. Freshly grated Parmesan offers better flavor and texture.
