Irresistible Cowboy Butter Chicken Pasta

  • 2 boneless, skinless chicken breasts, sliced into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, freshly minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • 12 ounces pasta (spaghetti, fettuccine, or penne)
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and set pasta aside.
  2. Season chicken pieces with salt, pepper, and a pinch of paprika. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, lower heat to medium. Add butter and let it melt. Stir in minced garlic, lemon juice, paprika, red pepper flakes, and parsley. Simmer for 2-3 minutes until fragrant.
  4. Add cooked pasta and reserved pasta water to the skillet with the sauce. Toss until pasta is coated in the buttery sauce. Add chicken back to the skillet and stir to combine.
  5. Taste and adjust seasoning with more salt or pepper if needed. Serve hot, garnished with extra parsley or a squeeze of lemon for freshness.

Notes

Save pasta water to adjust sauce consistency. Use fresh garlic for maximum flavor. Adjust red pepper flakes to control spice level.
