  • 2 tablespoons olive oil
  • 3 cloves garlic, minced or thinly sliced
  • 1 lemon (zest and freshly squeezed juice)
  • 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup dry white wine (or chicken stock)
  • 1 tablespoon honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels. Rub them with olive oil, salt, and black pepper for even coverage.
  3. Heat an oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 4-5 minutes until the skin is golden and crispy. Flip and sear the other side for 2-3 minutes.
  4. Lower the heat slightly and add minced garlic, lemon zest, and thyme sprigs to the skillet. Sauté for about 1 minute until fragrant.
  5. Pour in the white wine and squeeze fresh lemon juice over the chicken. Add a drizzle of honey and stir gently to combine.
  6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken thighs reach an internal temperature of 165°F (74°C).
  7. Remove the skillet from the oven and let the chicken rest for 5 minutes. Serve hot, garnished with fresh thyme and an extra squeeze of lemon juice if desired.

For maximum crispiness, avoid overcrowding the pan during searing. Use a meat thermometer to ensure the chicken is cooked to perfection. Adjust the sweetness of the sauce by reducing honey or adding more lemon juice.
