  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced thinly
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken or vegetable broth, low-sodium
  • 1 cup dry orzo pasta
  • 1 cup cooked chicken, shredded or diced (optional)
  • 2 cups fresh spinach
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large stockpot over medium heat.
  2. Add diced onion, garlic, carrots, and celery. SautΓ© for 5-7 minutes until softened and fragrant.
  3. Pour in the canned diced tomatoes and cook for another 2 minutes, stirring occasionally.
  4. Add the chicken or vegetable broth (about 6 cups) and bring to a gentle boil.
  5. Stir in the orzo pasta and let it cook for 8-10 minutes, stirring occasionally to prevent sticking.
  6. If using cooked chicken, add it now and simmer for 2-3 minutes to warm through.
  7. Reduce the heat to low and stir in fresh spinach. Let it wilt for about 1 minute.
  8. Season the soup with salt, pepper, and lemon zest. Squeeze in the juice of half a lemon for added brightness.
  9. Garnish with fresh parsley and oregano before serving.

Notes

Don’t overcook the orzo to avoid mushiness. Prep all vegetables and herbs ahead of time for a smoother cooking process. Add lemon zest at the end for a fresh citrus flavor.
