  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about Β½ inch.
  2. In three separate shallow bowls, add the flour to the first, beaten eggs to the second, and a mixture of Parmesan cheese, panko breadcrumbs, garlic powder, salt, and pepper to the third.
  3. Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, ensuring it’s fully coated. Finally, press it into the Parmesan breadcrumb mixture, making sure the entire surface is covered.
  4. In a large skillet, heat olive oil over medium heat until shimmering. Be careful not to let it smoke.
  5. Add the chicken breasts to the skillet, cooking for 3-4 minutes on each side or until golden brown and cooked through. You may need to work in batches to avoid overcrowding the pan.
  6. Remove the chicken from the skillet and place it on a plate lined with paper towels to drain excess oil.
  7. Let the chicken rest for 2-3 minutes, then serve immediately with your favorite sides.

Notes

For extra crispiness, finish the chicken under the broiler for a few minutes. Use freshly grated Parmesan for the best flavor and texture.
