  • 1 cup breadcrumbs (plain or Italian seasoned)
  • ½ cup milk
  • 1 large egg
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup milk (warm)
  • 4 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese
  • 2 tablespoons sour cream (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, ketchup, Worcestershire sauce, parsley, paprika, salt, and pepper.
  3. Mix everything together until well combined. Use your hands for even mixing.
  4. Transfer the meat mixture to a loaf pan and press it down evenly. Alternatively, shape the mixture into a loaf form on a baking sheet.
  5. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Remove from the oven and let the meatloaf rest for 10 minutes before slicing.
  7. While the meatloaf is baking, boil the potato cubes in a large pot of salted water until fork-tender, about 15-20 minutes.
  8. Drain the potatoes and return them to the pot.
  9. Add the warm milk, butter, shredded cheddar cheese, and sour cream (if using).
  10. Mash until smooth and creamy. Season with salt and pepper to taste.
  11. Plate slices of meatloaf alongside a generous scoop of cheesy mashed potatoes.
  12. Garnish with a sprinkle of fresh parsley if desired, and serve warm.
