Ingredients

Scale
  • 1 1/2 cups old-fashioned rolled oats (135g)
  • 1 cup all-purpose flour (125g)
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (115g)
  • 3/4 cup light brown sugar, packed (150g)
  • 1/4 cup granulated sugar (50g)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Optional add-ins:
  • 1/2 cup raisins or dried cranberries (75g)
  • 1/2 cup chocolate chips (90g)
  • 1/3 cup chopped nuts like walnuts or pecans (40g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Toast the oats in a dry skillet over medium heat for 3-4 minutes, stirring frequently until nutty and slightly golden (optional).
  3. In a large bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Set aside.
  4. Beat the softened butter, brown sugar, and granulated sugar until creamy and light, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until fully combined and smooth.
  6. Gradually add the dry ingredients to the wet, mixing gently until just combined. Avoid overmixing.
  7. Fold in the toasted oats and any optional add-ins like raisins, nuts, or chocolate chips.
  8. Cover and refrigerate the dough for 20-30 minutes (optional but recommended).
  9. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet spaced about 2 inches apart. For thicker cookies, gently press the dough balls down slightly.
  10. Bake for 10-12 minutes until edges are golden but centers still look soft.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Toasting oats adds a nutty depth of flavor. Chilling dough helps cookies hold shape and stay thick. Avoid overmixing to keep cookies tender. Watch baking time closely to keep centers soft. For gluten-free, use gluten-free flour and certified gluten-free oats. For dairy-free, substitute butter with plant-based alternatives and egg with flax egg.
