  • 8 oz soft plain goat cheese
  • 4 oz cream cheese
  • 6 strips crispy cooked bacon, crumbled
  • 2 tbsp fresh chives or parsley, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 tbsp honey (optional)
  • Crackers or fresh veggies for serving

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Lay the bacon strips on a baking sheet and cook until crispy, about 12-15 minutes. Remove, let cool, and crumble into small pieces.
  2. In a mixing bowl, combine the goat cheese, cream cheese, garlic powder, and black pepper. Stir until smooth and well blended.
  3. Fold in the crispy bacon crumbles and chopped chives or parsley. If using nuts, add them at this stage.
  4. Place the cheese mixture onto a piece of plastic wrap. Use the wrap to shape it into a log, roughly 6-8 inches long.
  5. Spread additional bacon crumbles, herbs, or nuts onto a flat surface. Roll the log over the toppings until fully coated.
  6. Wrap the log in the plastic wrap and refrigerate for at least 30 minutes to firm up.
  7. Place the log on a serving platter and drizzle lightly with honey if desired. Serve with crackers or veggie sticks.
