A quick and comforting stir-fry featuring tender roast beef and crisp broccoli in a savory sauce, perfect for busy weeknight dinners or using up leftovers.

Ingredients

Scale
  • Thinly sliced roast beef (leftover, lean with some marbling)
  • Fresh broccoli florets (1 to 1½ inches)
  • 3 tablespoons soy sauce (45 ml)
  • 1 tablespoon oyster sauce (15 ml)
  • 1 teaspoon brown sugar (4 g)
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch (3 g)
  • 2 tablespoons water or beef broth (30 ml)
  • 1 tablespoon vegetable oil or sesame oil (15 ml)
  • Optional: red pepper flakes
  • Optional: sliced green onions for garnish

Instructions

  1. Slice the roast beef thinly against the grain into bite-sized strips (approx. 5 minutes).
  2. Cut fresh broccoli into small florets, rinse and set aside (approx. 5 minutes).
  3. In a bowl, combine soy sauce, oyster sauce, brown sugar, minced garlic, grated ginger, and cornstarch mixed with water or beef broth to make the marinade and sauce (approx. 3 minutes).
  4. Toss the sliced beef in half of the sauce mixture and let it marinate for 10 minutes.
  5. Heat vegetable or sesame oil in a wok or large skillet over medium-high heat until shimmering (approx. 2 minutes).
  6. Add broccoli florets and stir-fry for 3-4 minutes until bright green and crisp-tender, then remove and set aside (approx. 4 minutes).
  7. Add more oil if needed, then stir-fry the marinated beef for 2-3 minutes until heated through and starting to brown (approx. 3 minutes).
  8. Return broccoli to the wok with the beef, pour in the remaining sauce mixture, and stir until the sauce thickens and coats everything (approx. 2 minutes).
  9. Remove from heat, garnish with sliced green onions or red pepper flakes if desired, and serve immediately over steamed rice or noodles (approx. 2 minutes).

Notes

Slice beef thinly against the grain for tenderness. Do not overcrowd the wok to maintain sear and crispness. Keep heat high for signature wok flavor. Adjust sauce thickness with water or broth if needed. Marinate beef for at least 10 minutes for best flavor.
