Instructions

  1. Rinse and pat dry chicken breasts. Pound each breast to about 1/2 inch thickness for even cooking (about 5 minutes).
  2. In a medium bowl, combine minced garlic, grated Parmesan, Italian seasoning, kosher salt, and black pepper. Mix well.
  3. In another bowl, whisk together olive oil, melted butter, and fresh lemon juice.
  4. Brush both sides of each chicken breast generously with the olive oil and butter mixture. Press each side into the garlic Parmesan mixture to coat completely, forming a crust (about 10 minutes for all pieces).
  5. Preheat the Blackstone griddle to medium-high heat (around 375°F). Lightly grease the surface with olive oil to prevent sticking.
  6. Place the coated chicken breasts on the hot griddle. Cook for 5-6 minutes per side, flipping carefully with tongs to preserve the coating. Look for a crispy, golden brown crust and distinct griddle marks. Use a thermometer to check for an internal temperature of 165°F. Total cook time is about 12 minutes.
  7. Remove chicken from the griddle and let rest for 5 minutes to lock in juices. Sprinkle with chopped fresh parsley before serving.
