  • 1 cup fresh pineapple, chopped

  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)

  • 2 stalks green onions, sliced thin

Instructions

  1. Pat the chicken breasts or thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. In a blender or food processor, combine the chopped fresh pineapple, soy sauce, honey, minced garlic, grated ginger, apple cider vinegar, and red pepper flakes. Blend until smooth and pour into a bowl. Taste and adjust sweetness or acidity if needed.
  3. Preheat your Blackstone griddle to medium-high heat (around 375°F). Add 1 tablespoon of olive oil and spread it evenly.
  4. Place the seasoned chicken on the griddle and sear for about 5-6 minutes on the first side without moving it to develop a golden crust. Flip carefully using tongs.
  5. Brush a generous layer of the pineapple glaze over the cooked side. Continue cooking another 4-5 minutes, brushing more glaze every minute or so until caramelized and thickened without burning.
  6. Flip the chicken back over and repeat the glazing process on the other side for 3-4 minutes to lock in flavor and create a sticky finish.
  7. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C). The juices should run clear and the chicken should feel firm but juicy.
  8. Remove the chicken from the griddle and let it rest for 5 minutes to redistribute juices.
  9. Sprinkle with sliced green onions and toasted sesame seeds for garnish. Serve hot with your favorite sides.
