Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until just crispy but still pliable, about 5-7 minutes. Drain on paper towels.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, chopped onion, minced garlic, Worcestershire sauce, ketchup, Dijon mustard (if using), salt, and pepper.
  4. Fold in shredded cheddar cheese gently to distribute cheese pockets without overmixing.
  5. Lightly grease a 9×5-inch loaf pan. Press half of the meat mixture evenly into the pan.
  6. Sprinkle a thin layer (about 1/4 cup) of cheddar cheese over the meat layer.
  7. Cover the cheese layer with the remaining meat mixture, pressing gently to seal.
  8. Arrange the cooked bacon strips across the top of the meatloaf.
  9. Place the loaf pan on a baking sheet to catch drippings and bake for 55-65 minutes or until the internal temperature reaches 160°F (71°C). Tent with foil halfway through if bacon browns too quickly.
  10. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
