  • 1 ½ cups (225 grams) cooked shredded chicken
  • 1 medium ripe avocado
  • 23 slices cheese (sharp cheddar, pepper jack, Swiss, or mozzarella)
  • 2 tablespoons mayonnaise (vegan mayo optional)
  • 1 teaspoon fresh lime juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices bread (sourdough, ciabatta, or whole wheat)
  • 12 tablespoons butter or olive oil for toasting

Instructions

  1. In a medium bowl, combine shredded chicken with mayonnaise, garlic powder, lime juice, salt, and pepper. Mix gently until evenly coated. Let chicken sit if cold.
  2. Slice or mash the avocado just before assembling to keep it fresh and vibrant.
  3. Lay out 4 slices of bread. Spread the chicken mixture evenly on two slices. Top each with sliced avocado, then layer 2-3 slices of cheese. Cover with remaining bread slices.
  4. Heat butter or olive oil in a nonstick skillet over medium heat. Place one sandwich in the pan and cook for 3-4 minutes until golden brown. Flip and cook another 3-4 minutes until cheese melts and bread is toasted. Adjust heat as needed.
  5. Remove sandwich from skillet, let sit for 1 minute, then cut in half and serve immediately.

Notes

Use ripe avocado and add lime juice to prevent browning. Adjust heat to avoid burning bread before cheese melts. For dairy-free, use plant-based cheese and extra avocado. For gluten-free, use gluten-free bread or lettuce wraps. Press sandwich gently while cooking to help bind ingredients.
