  • Fajita seasoning:
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano
  • ½ teaspoon onion powder
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • Juice of 1 fresh lime
  • A handful fresh cilantro, chopped (for garnish)
  • 68 small tortillas (flour or corn), warmed

Instructions

  1. Thinly slice chicken breasts into ¼ inch strips. Slice bell peppers and onion into thin strips. Mince garlic.
  2. In a small bowl, combine chili powder, ground cumin, smoked paprika, oregano, onion powder, salt, black pepper, and cayenne pepper if using. Stir to blend.
  3. Place chicken in a large mixing bowl. Drizzle with 1 tablespoon olive oil and sprinkle seasoning mix over it. Toss to coat evenly. Let sit 5-10 minutes if possible.
  4. Heat 1 tablespoon olive oil in a large skillet or cast iron pan over medium-high heat until shimmering.
  5. Add chicken strips in a single layer. Sear undisturbed for 3 minutes, then stir and cook another 3-4 minutes until cooked through and browned. Remove chicken and set aside.
  6. In the same pan, add bell peppers, onion, and minced garlic. Cook 5-7 minutes, stirring occasionally, until veggies soften but remain slightly crisp with some char.
  7. Return chicken to pan with veggies. Squeeze fresh lime juice over and toss to combine. Cook 1 more minute to marry flavors.
  8. Warm tortillas in a dry skillet or microwave wrapped in a damp paper towel until soft and warm.
  9. Serve chicken and veggie mixture on warm tortillas. Garnish with chopped cilantro and optional toppings like salsa, guacamole, or sour cream.
