  • 2 large yellow onions, thinly sliced
  • 2 tbsp (28 g) unsalted butter
  • 1 tbsp (15 ml) olive oil
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) Worcestershire sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 4 slices Swiss cheese
  • 4 burger buns (soft brioche preferred)
  • 1 tsp fresh thyme, finely chopped (optional)
  • Mustard or horseradish sauce (optional)

Instructions

  1. Heat butter and olive oil in a skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 25-30 minutes until onions are deeply golden and caramelized. Add minced garlic during the last 2 minutes and stir well, watching to avoid burning.
  2. In a mixing bowl, combine ground beef with Worcestershire sauce, fresh thyme (if using), salt, and pepper. Mix gently until just combined. Divide into 4 equal portions and shape into patties about ¾-inch thick, making a slight indentation in the center.
  3. Heat the same or a clean skillet over medium-high heat. Cook patties for 4-5 minutes per side until a nice crust forms and internal temperature reaches 160°F (71°C). Flip gently to keep patties intact.
  4. Place a slice of Swiss cheese on each patty and cover the pan with a lid or foil. Let cheese melt for 1-2 minutes until gooey.
  5. Toast brioche buns lightly if desired. Spread mustard or horseradish sauce on the bottom bun (if using), add cheesy patty, then top with a generous spoonful of caramelized onions. Cover with the top bun and serve immediately.

Notes

Do not rush the onion caramelization; slow cooking brings out natural sweetness. Add garlic at the end of caramelization to avoid bitterness. Avoid overmixing the beef to keep patties tender. Indent patties to prevent puffing. Toast buns to prevent sogginess. Patties rest for a couple of minutes after cooking to retain juices. Caramelized onions can be made ahead and reheated gently.
