Savory French Onion Sausage Rolls

Warm, flaky sausage rolls filled with caramelized French onions and savory sausage, perfect as an easy homemade snack bursting with flavor.

  • 1 sheet (about 8 oz / 225 g) butter-based puff pastry, thawed but still cold
  • 12 oz (340 g) good-quality pork sausage meat, casing removed
  • 2 large yellow onions, thinly sliced
  • 2 tbsp (28 g) unsalted butter
  • 2 cloves garlic, minced (optional)
  • 1 tsp fresh thyme, chopped (or ½ tsp dried)
  • 1 large egg, beaten
  • Salt and pepper to taste
  • 1 tbsp Dijon or whole grain mustard (optional)
  • ¼ cup (30 g) plain or seasoned breadcrumbs

Instructions

  1. Caramelize the Onions: Heat butter in a large skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until onions are golden brown and sweetly caramelized, about 15-20 minutes. Add minced garlic and thyme in the last 2 minutes. Splash water if onions start to stick.
  2. Prepare the Filling: In a mixing bowl, combine sausage meat, caramelized onions, breadcrumbs, mustard, salt, and pepper. Mix gently but thoroughly to blend flavors without overworking the meat.
  3. Roll Out the Pastry: On a lightly floured surface, unfold the thawed puff pastry sheet. Roll it out gently to smooth creases and lengthen to about 12×10 inches (30×25 cm).
  4. Assemble the Rolls: Spread the sausage-onion filling evenly down the center of the pastry, leaving about 1-inch (2.5 cm) space on all sides. Fold one side of the pastry over the filling, then the other, sealing edges by pinching and pressing firmly. Crimp edges with a fork.
  5. Slice and Egg Wash: Transfer roll seam-side down onto a baking sheet lined with parchment paper. Slice into 1 ½ inch (4 cm) pieces. Brush tops generously with beaten egg.
  6. Bake: Preheat oven to 400°F (200°C). Bake sausage rolls for 20-25 minutes or until puffed and golden brown. Watch closely to avoid burning.
  7. Cool and Serve: Let rolls cool slightly on a wire rack for 5 minutes before serving. Best served warm or at room temperature.

Notes

Caramelize onions slowly over medium-low heat for best sweetness and color. Do not overmix sausage filling to keep rolls tender. Egg wash gives a golden crust. Slice rolls before baking for even cooking. Rolls can be prepared ahead and refrigerated or frozen.
