Crispy on the outside, soft and pillowy inside, these savory mashed potato puff bites are filled with gooey cheese, making them a perfect easy snack or appetizer.

  • 2 cups (450g) mashed potatoes (preferably Russet)
  • 1 cup (100g) cheddar and/or mozzarella cheese, cut into small cubes
  • ½ cup (60g) all-purpose flour
  • 1 large egg, beaten
  • 2 tablespoons green onions, finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • Pinch of black pepper (or to taste)
  • 2 tablespoons butter, melted
  • Optional: dried thyme or parsley for herbs

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, combine mashed potatoes, flour, beaten egg, green onions, garlic powder, salt, and pepper. Mix gently until well incorporated and thick enough to hold shape. Add more flour if too sticky.
  3. Dice the cheese into small ½ inch cubes and set aside.
  4. Using a spoon or small cookie scoop, take about 2 tablespoons (30g) of the potato mixture and flatten it slightly in your hand. Place a cheese cube in the center, then mold the potato mixture around it, sealing the cheese inside completely to form a small ball or oval. Repeat with remaining mixture and cheese.
  5. Place each puff bite on the prepared baking sheet about 1 inch apart. Brush each lightly with melted butter.
  6. Bake for 20-25 minutes until golden brown and crispy on the outside with melty cheese inside.
  7. Let cool for 3-5 minutes before serving.

Notes

Use small cheese cubes to prevent leaking during baking. Brush with melted butter for a crispy golden crust. If mixture is too loose, add more flour. Can be made gluten-free by substituting flour with gluten-free blend or almond flour. For vegan version, use plant-based mashed potatoes, vegan cheese, and flax egg.
