Slow Cooker Cajun Red Beans and Rice

A hearty and flavorful Cajun dish featuring smoky sausage, creamy red beans, and perfectly cooked rice, all made effortlessly in a slow cooker.

  • 1 pound dried red beans, rinsed and soaked overnight
  • 12 ounces andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 4 cups chicken broth
  • 2 cups long-grain white rice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Rinse the dried red beans under cold water and soak them overnight in a large bowl filled with water.
  2. Chop the onion, bell pepper, and celery into small pieces. Mince the garlic and slice the sausage into bite-sized rounds.
  3. Optional: Heat a large skillet over medium heat and brown the sausage for a few minutes to enhance its flavor.
  4. In your slow cooker, combine the soaked beans, sausage, chopped vegetables, garlic, Cajun seasoning, smoked paprika, bay leaves, and chicken broth. Stir everything together.
  5. Set your slow cooker to low heat and cook for 8-10 hours, or until the beans are tender. If you’re short on time, use the high setting for 4-6 hours.
  6. Once the beans are cooked, remove the bay leaves and mash a small portion of the beans with the back of a spoon to thicken the mixture. Season with salt and pepper to taste.
  7. Cook the rice according to package instructions. Fluff with a fork and set aside.
  8. Serve the red beans over a bed of rice, garnished with fresh parsley or green onions if desired.
