Instructions

  1. Trim excess fat from the chuck roast and cut into roughly 1-inch pieces. Wash the small red potatoes and cut them in half. Pat everything dry with paper towels.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes on all sides in batches, about 2-3 minutes per side. Transfer browned beef to the slow cooker.
  3. In the same skillet, reduce heat to medium and add butter. Once melted, stir in minced garlic and cook until fragrant, about 1-2 minutes. Pour in beef broth and Worcestershire sauce, scraping browned bits from the pan. Simmer for 2-3 minutes.
  4. Add halved potatoes, fresh thyme, salt, and pepper to the slow cooker with the beef. Pour the garlic butter sauce over the ingredients.
  5. Cover and cook on high for 4-5 hours or on low for 7-8 hours until beef is fork-tender and potatoes are soft but not mushy.
  6. Stir gently, taste, and adjust seasoning with salt and pepper as needed before serving.
  7. Optional: If sauce is too thin, mix 1 teaspoon cornstarch with 2 teaspoons cold water and stir into slow cooker. Cook uncovered on high for 15 minutes to thicken.
