  • 1/3 cup (40g) all-purpose flour
  • 2 tablespoons (15g) unsweetened cocoa powder (Dutch-processed works best)
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • Pinch of salt
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 2 tablespoons (30ml) vegetable oil
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons (30ml) brewed coffee, cooled
  • 2 tablespoons (30ml) milk, room temperature
  • 1/4 cup (60ml) heavy cream
  • 2 ounces (55g) semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Grease your 6-inch cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the sugar, egg, vegetable oil, vanilla extract, coffee, and milk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Avoid overmixing to keep the cake tender.
  5. Pour the batter into the prepared pan and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Heat the heavy cream in a microwave-safe bowl until steaming (about 30 seconds). Add the chopped chocolate and let it sit for 2 minutes, then stir until smooth and glossy.
  8. Once the cake is cool, pour the ganache over the top, spreading it gently to the edges. Let it set for 10-15 minutes before slicing.

Notes

Use room temperature ingredients for even mixing. Avoid overmixing the batter to keep the cake tender. Adjust baking time based on your oven. Chill the cake for clean slices.
